Hello Philip. You would have to look for it in Latin American specialty markets. However you can replace Huacatay for other strong flavored herbs like Cilantro or Parsley and you will get e very nice sauce. Hope this helps!

I'll probably use cilantro, I won't be finding that herb where I live. But if I make a batch, how long do you think it will last in the fridge? Thinking I'll use it like pesto sauce to put over my proteins on a salad bowl.

Hello! Cilantro would be a good choice. I would give fresh basil a shot if you want to make it more pesto-like. It can las for about two weeks in the fridge. The acid taste should be your heads up. If you feel it gets acid you need to throw it away. This will happen way before it gets completely spoiled. You should stop consumption then to avoid any health issues.
