Cooking Instructions

Peel potatoes
- 2
Diced it into cubes
- 3
Wash and cook diced potatoes

In a separate bowl,break 2 eggs,add a cube of maggi,curry powder, diced onions and Scotch bonnet,whisk very well and then add cooked diced potatoes

In a pan heat veg oil and add potato mixure,allow it to fry,flip the other side and fry until golden brown. Enjoy with lemon tea

This is one of the first things that I learned to make as a kid. Sunday nights, my pops would do the cooking and I always looked forward to it. He could make anything taste good. It was his gift. Big Daddy, as people called him, could make simple dishes such as this so tasty.When I was about 4 years old, I remember standing on a chair in the kitchen, watching him cook. Every single Sunday, I would ask him if I could help, but he would say one day. For people that know me, they know that I am very persistent. I kept asking and asking and asking and asking. Finally, one Sunday, he showed me how to crack some eggs, add some spices, some milk, and how to beat the eggs. A simple task, but I felt as if I was helping.From there, as the years passed, he would give me different things to do to help him cook. When people complimented his cooking, I felt as if they were complimenting me as well.At around 17 years of age, I actually attempted to make this dish. To say it was different, is being nice. My pops said, "Good first attempt." A backhanded compliment, but it got me to make it better the next time.The best compliment that I have received to date is when he told me that it was just as good as his. Best compliment ever.This is a great Italian Sandwich. Simple, yet so tasty. Eggs, Potatoes, spices, and Boom!Enough about the backstory, lets get to the recipe.Enjoy! J.A.B. -

When I was young, I pored over ancient cookbooks. I couldn’t afford to take the family to dinner or fill a freezer with convenience foods because I was so broke. So I took what I learned from my mom and read every cookbook I could get my hands on, and started educating myself. If I couldn’t buy it, I would make it with inexpensive, bare bones ingredients. But first I had to learn HOW to make it. As we all know, we’re still in school 😂 my basics are, as an example, potatoes, eggs, cooked sauces, a chunk of meat, cakes, cookies, veg, etc. I’ve made a LOT of bad food in my life but I’ve also made really good stuff too. My first roast I ever made took 20 minutes, it was grey, and it bounced🤣🤣 With these basic recipes I’m posting, I’m hoping someone can get some good basic knowledge to feed themselves and their families good homemade food and not be a slave to the high prices. A sack of potatoes is cheaper than a bag of frozen fries and tastes waaaaay better and you get so much more bang for your buck with more than one serving and options.
