Traditional Provence Ratatouille

This is one of our favorite end of summer vegetable dishes, I have
made it layered and baked, all in a pot Luke a stew and your way and I agree the best is the seperate cooking of each vegetable, yours looks delicious?

Me too! I just love it! I haven't tried the layered version yet but one of these days ;) I do enjoy the baked version more than the stewed ones so far though. I feel like it brings out the flavor more. Do you have a recipe too?

Not one that I have written down and photographed, I should take the time next time I make it, it's fun to see the variations of great disges!

I tried this earlier in the week - it was out of this world! I loved it, and my company was impressed. Thanks for sharing!

Thanks so much for your comment!! I'm so happy you guys enjoyed it so much. I remember the first time I made this too - I couldn't believe how amazing it tasted. (Thanks to the French lady I got the recipe from!)

That's what the original recipe said :) If you're worried, I guess you could put it in the fridge after it cools.

Thanks! We figured that since it was all veggies, it would be safe to leave out. Turned out very tasty. Thanks for the recipe!

Sorry for the late reply... Yay! I'm so glad you enjoyed it! This is one of my favorites :)
