These delicious melt in mouth cookies are made with a very few ingredients. Coconut cookies can be perfectly paired with a cup of milk, tea or coffee. Do try this cookies for your kids.
Cooking Instructions

Firstly, mix wheat flour and baking powder together and sieve it twice. Keep aside.

Now in a big mixing bowl, add clarified butter, sugar and cardamom powder. Whisk well till the mixture becomes light and pale in colour.

Now add in the flour into this mixture and bring it together using your hands. Do not whisk, knead or over mix it.

Further, add in the dessicated coconut and mix with very light hands.

Pinch a small portion from coconut mixture and into a ball and flatten it a bit.

Make more from the remaining mixture and arrange them in the edges in a baking tray.

Bake these cookies for 15 minutes in a preheated oven at 180°

Once done, let them cool down completely.

Enjoy these delicious melt in mouth cookies with a cup of milk, tea or coffee.

Store coconut cookies in an air tight container.

I was craving for something that has coconut flavor in the middle of the night. I had only the four ingredients in my apartment, so I decided to try baking this coconut cookies using rice flour instead of the all-purpose flour to see the difference. The cookies turned out awesome. It has rich flavor. If you don't want it to be mushy in the middle, you can reduce the amount of margarine to only half of 1/4 cup. Also, 2 tablespoons of powdered would be just fine, too. Try it! It's really yummy. It goes well with a cup of coffee or green tea. And oh, much better if you run after consuming it, too. ;) Sautta S.S. -
