Cooking Instructions

Wash onions, tomatoes, green pepper, carrots, spring onions, garlic, ginger.

Remove onion scales and chop into medium pieces. Cut tomatoes into small pieces too. Blend the onions. Blend the tomatoes as well

Cut green pepper, spring onions and carrots into pieces.

Wash fish and spice with ginger,garlic and other spices of your choice.

Put oil enough for stew into a sauce pan. Place it on low heat fire to heat up a little. Then pour blended onions into the hot oil. Allow it to summer for a while then add blended tomatoes. Stir the two to get a uniform mixture.

Leave to simmer for about 6 minutes. Add tomatoes puree. Stir to mix completely. The mixture becomes a rich red colour.

Add pepper and salt. Leact to simmer.

Fry spiced fish. Add spiced fish to the content of the sauce pan. Stir and leave to simmer.

Add the cut green pepper, carrots and spring onions and stir. Leave to simmer for about 15 minutes. After 15 minutes take it of fire. Your stew is now ready.

You can enjoy it with fried yam or cooked rice.

I used my left over vegetables . One egg plant was gone half bad, used my frozen tomatoes , and add a can of black beans. You can use any can of legumes ( chickpeas , white beans, but lentils would not be a good idea, )if you don’t want to use oven you can use same pot to cook if you are too lazy or have no time. .
