One can always make lot dough by hand. To use kitchenaid stand mixer, use the dough hook and run it only in level 1. It takes 10 minutes or so and you need to make lot from minimum 4 cups of wheat flour. Use breadmaker on dough setting for smaller quantities. I have found breadmaker to be good only for softer rotali sough.
Use wheat flour bought from indian grocery stores only, american wheat flour is almost either too white or too coarse.
