烤雞好像很難,但實際上簡單程度跟吃碗魯肉飯差不多,只要掌握烤溫跟時間,選用品質好的雞,就算只有鹽巴胡椒調味也很好吃,幫雞塗上助曬油,丟進烤箱就好了,宴客很好用的一道料理,剩下的骨頭與提香蔬菜還能拿來做高湯,一兼二顧。來烤雞吧 c’est parti。

料理步驟

先預熱烤箱180度

洋蔥,紅蘿蔔,西洋芹,檸檬切3~4公分大塊,馬鈴薯,切5公分大塊

雞洗淨,內外都擦乾,並均勻撒上黑胡椒與鹽

從底部大腿內側將皮肉分離,抹上胡椒鹽與奶油,再把外層也抹上奶油,若單純只用胡椒鹽沒有蔬菜可跳至步驟6

將一半的洋蔥,紅k,西芹,檸檬,香草,塞入雞體內

剩下的所有蔬菜舖烤盤上,均勻拌上油,鹽胡椒調味

雞胸朝上放上烤盤,180度烤1.5小時,中途45分時取出將流出的汁水淋到雞身上再放回烤箱

預計烘烤時間到時,拿刀子往雞腿最厚地方刺入深處後拔出,若流出汁水為清徹色(沒血色),靜置10分鐘後可分切食用,搭配馬鈴薯,炒菇類,bon appétit
