I'm a Mother of two, daughter and son. Ive been cooking for 30 yrs or so, I love to try anything new. I'm British but living in the u.s.a. :)....wicked sense of humour, for which I apologize in advance...........not :-)

Simple to do, and a very tasty breakfast, definitely a must try for people who enjoy eggs. :-)

My whole family enjoyed this, I put a can of chilli in the greased dish first, then the enchiladas. Finally I used another can of chilli across the middle with a layer of cheese on top of that .I will be fixing this one again..thanks for sharing ! :flower
