Ingredients

  • 2 cupssugar
  • 1 cupdistilled white vinegar
  • 6 cupsmangoes (4 to 5), peeled and cut in 3/4-inch pieces
  • 1medium onion chopped
  • 1/2 cupgolden raisins
  • 1 tbspcumin
  • 1/4 cupginger clove finely chopped
  • 1garlic minced
  • 1 teaspoonmustard seeds
  • 1/4 teaspoonred chilli pepper flakes

Steps

  1. 1

    Make sugar vinegar syrup,Combine sugar and vinegar in a 6 quart pot,bring to a boil, stirring until sugar dissolves.

  2. 2

    Add remaining ingredients and simmer, uncovered, until syrupy and slightly thickened, 45 minutes to 1 hour. Stir occasionally during cooking.

  3. 3

    Pour into jars: Pour into clean, hot jars leaving 1/2-inch headspace, close jars.

  4. 4

    Cool in room temperature,then serve...

Can you actually make a big batch and seal the jars for future use ie , using the canning process ?
