In a bowl, combine the ground beef, onion, parsley, garlic, ginger, and all the listed spices. Mix well. Grease a baking dish with oil, shape the meat mixture into finger-sized kebabs, and arrange them in the dish.

Preheat the oven and bake the kebabs until cooked through and lightly browned.

Meanwhile, for the tomato sauce, place the grated tomatoes, tomato paste, salt, and a pinch of black pepper in a saucepan over heat. Bring to a boil, then remove from heat.

Pour the tomato sauce over the kebabs and return the dish to the oven.

While the kebabs are baking, heat the charcoal on a gas burner until it is red hot.

Place the hot charcoal on a piece of aluminum foil, add a tablespoon of olive oil, and quickly place it in the baking dish. Cover immediately to allow the kebabs to absorb the smoky flavor.
