Most people usually make chole or chana masala with kabuli chana (chickpeas), but here I've made a desi-style Kabuli Chana Chaat that's very easy to prepare and turns out delicious and flavorful. You should definitely try it and let me know how it turns out.

First, rinse the kabuli chana (chickpeas) thoroughly in water 3-4 times and soak them in water for 6-7 hours.

Next, add the soaked chickpeas to a pressure cooker with 1 cup water (about 240 ml), baking soda, and salt to taste. Cook on medium heat for 4-5 whistles, then simmer for another 2-3 minutes.

Once the pressure releases, let the chickpeas cool slightly. If there is excess water, drain it and set it aside.

In a large bowl, combine the cooked chickpeas, chopped onion, tomato, potato, cucumber, ginger, green chilies, cilantro, all the spices, lemon juice, green chutney, and sweet chutney. Mix well and serve.
