Ingredients

  1. 1 cupkabuli chana (chickpeas) (about 200 grams)
  2. 1small onion, finely chopped
  3. 1small tomato, finely chopped
  4. 1small boiled potato, finely chopped
  5. 1/2cucumber, finely chopped
  6. 1 tablespoongrated ginger
  7. 1 tablespoonlemon juice
  8. 1-2green chilies, finely chopped
  9. A fewsprigs cilantro, chopped
  10. 1/4 teaspoonbaking soda
  11. 2 tablespoonsgreen chutney
  12. 1 tablespoonsweet chutney
  13. 1 tablespoonchaat masala
  14. 1 tablespoonroasted cumin powder
  15. 1/4 teaspoonred chili powder
  16. 1/4 teaspoonblack pepper powder
  17. 1/6 teaspoonblack salt
  18. Salt to taste

Steps

  1. 1

    First, rinse the kabuli chana (chickpeas) thoroughly in water 3-4 times and soak them in water for 6-7 hours.

  2. 2

    Next, add the soaked chickpeas to a pressure cooker with 1 cup water (about 240 ml), baking soda, and salt to taste. Cook on medium heat for 4-5 whistles, then simmer for another 2-3 minutes.

    Once the pressure releases, let the chickpeas cool slightly. If there is excess water, drain it and set it aside.

  4. 4

    In a large bowl, combine the cooked chickpeas, chopped onion, tomato, potato, cucumber, ginger, green chilies, cilantro, all the spices, lemon juice, green chutney, and sweet chutney. Mix well and serve.
