Ingredients

2 servings
  1. 1& 1/2 cups Dashi Stock OR Chicken Stock
  2. *Note: 1 & 1/2 cups Water and 3/4 teaspoon Dashi Powder
  3. 1 cupCooked Short Grain Rice *firmly packed
  4. 1Spring Onion *finely chopped, save some for topping
  5. 1cupful chopped Green Vegetables *e.g. Bok Choy, Spinach, Silverbeet Leaves, Kale, etc
  6. 1/4 cupEdamame (Young Soy Beans)
  7. 1 tablespoonSoy Sauce
  8. 1/2 tablespoonMirin
  9. Salt as required
  10. 1/2 teaspoonGrated Ginger
  11. 1/2-1 sheetToasted Nori (Seaweed Sheet) *torn into small pieces

Steps

  1. 1

    Place Dashi Stock and Cooked Rice in a saucepan, bring to the boil over medium high heat. Break down any lumps.

  2. 2

    Add all Vegetables, bring to the boil, reduce heat to low and simmer until vegetables are cooked. Season with Soy Sauce, Mirin and Salt.

  3. 3

    Add grated Ginger and stir, then remove from the heat.

  4. 4

    Pour the rice soup in a serving bowl, place plenty of Toasted Nori and saved Spring Onion on top, and enjoy.
