This reminded me of a pasta and pine nut recipe I use to eat in Germany
Steps

Peel and grate the carrots then finely chop the shallots and garlic

First saute the onions until soft, then add the garlic until soft. Stir in the sugar and cook down until almost al liquid has dissolved. Add the chopped tomatoes. Toast the pinenuts.

Mix well and cook down until almost all liquid is dissolved. Add the parmesan cheese stir in well. Add all seasonings (salt, pepper, paprika, lovage or wild garlic powder.) Stir. Then add the quark or cottage cheese. Here I served it with pasta shells and seabass. Sprinkle with the toasted pine nuts.
