Take all the ingredients.

Take a pan and add butter and oil in medium heat. Once heated add cumin seeds, red chilli and bay leaf.

Add chopped onions and sauté for a few seconds and then add ginger garlic paste and sauté for few seconds.

Now add boiled potatoes, capsicum, grated beet root and mix well sauté for few seconds.

Add cooked rice and salt to taste. Properly mix

Your healthy beet root rice is ready. Enjoy with curd or any raita
