Ingredients

75 minutes
15 servings
  1. 6 cupsall-purpose flour (about 750 grams)
  2. 3/4 cupsugar (about 180 grams)
  3. 1 pinchsalt
  4. 4eggs
  5. 1 1/2 ouncesfresh yeast (about 40 grams)
  6. 7 ounceslard (about 200 grams)
  7. 2 tablespoonswater (about 30 ml)
  8. 1/3 cuppowdered sugar (about 50 grams) for dusting the ensaimadas

Steps

  1. 1

    Place half of the flour in a bowl. Add the yeast dissolved in warm water and mix until you get a creamy dough. Cover with plastic wrap and let it rest for 30 to 45 minutes.

    Add the eggs one at a time, mixing each in to fully incorporate into the dough.

    Add the remaining flour and the sugar, then knead well until the dough is elastic. Let the dough rest for 30 minutes.

    Roll out the dough until very thin, spread the lard over it, and roll it up.

    Cut pieces of dough about two fingers wide, stretch them out, and shape them into ensaimadas.

  6. 6

    Place the ensaimadas on a baking sheet lined with parchment paper, spacing them well apart to prevent sticking during rising and baking.

  7. 7

    Let them rise until doubled in size, then bake in a preheated oven at 350°F (180°C).

    Remove the ensaimadas from the oven, let them cool, and dust with powdered sugar.
