Marinate the mince chicken with finely grated ginger, garlic and mint. Add one egg and some milk. The mixture will be a little runny but that is needed to get a juicy burger as chicken dries out very fast during the cooking process.

To make the sauce: Add the chopped onion, garlic, salt, pepper and sugar to heated oil. Let it caramelise and turn slightly brown. Add a splash of cider vinegar,add the green chilli, tomato sauce and some water and let it thicken to a sauce like consistency.

Add the chicken patty to a heated pan and cover it with a glass lid. When one side is seared. Flip it over. Each side will take 10-15 minutes to cook. Keep it covered while it cooks

Add sliced onions to the hot pan and grill them, so that they caramelise lightly.

When it is almost done, add cheese slices (I used jalapeño flavoured cheese slices) and cover till the cheese melts
