Alhamdulillah.it went like... the children wud like abluqs to make some lovely food esp his much liked yellow fluffy rice ,so then umluqs had to say why not I make the sauce.Anyhows, without the rice the sauce isn't sauce right guys and .....so goes the story of abluqs and umluqs team.! ... offcourse with luqs orders (thats the elder brother for us!)...#mycookbook

Ingredients

approx 2 hours
6 servings
  • 3 cupsakash basmti rice(fragrant and long grain)
  • 1whole medium halal chicken
  • Halfcan chopped tomators
  • Plain water
  • 5medium red onions
  • Cooking oil for deep fry and frying sauces and for rice
  • Potatoes
  • 3long stems /sticks celery
  • 1whole red bellpepper
  • 1green chilli
  • Spices:2 tspn corriander powder,cummin powder,paprika powder,
  • Spices(whole):6 cloves sprigs, 2 small pieces cinnamon stick,few
  • Spices:few black pepper corns
  • Marination: (for chicken) corriander ginger,garlic salt
  • Tumeric(natural color for rice)

Steps

approx 2 hours
  1. 1

    Prep the chicken(here used premarinated and frozen):defrost until no icy or coldness.then mean while do the other preps.this dish preps are more then cooking so can do some preps in advance e.g. the blended sauce can freeze and just defrost use on day

    Prep the sauce:if dint hav it handy then prep the celery and pepper and tomato,chilli.into blended sauce.waiting for cooking later.prep onions,slice thin circles.put side

    Now can fry onions,and pttoes,also steam the chicken.the onions need to brown but not burn.then layer out on paper towel or so, to drain oil nd to crisp.set aside for use later in sauce..add oil in saucepan and warm until hot,and sizzle in the blended mixture. Niceally simmer until dry.can then add the potatoes and cook.Then add in onions.and some water.a cup or so

    Only about 2 tablespoon yogart, used here.When adding yogart do it by spooning to avoid curdling,and @lower heat then mix in.and let potatoes cook.add in the browned chicken pieces.and let simmer and cover the pot. add more water only enof,(not too much though)to cook everything into a more smoother curry.note it may be that not all onions or celery texture(depending how long simmers and how well blended,and water addedetc) disappear but overall the sauce is smooth.

    Rice can be prepared while the sauce is already about half way done.this was abluqs department bit managed to get few shots!..thank u abluqs!

    Then mix the chicken in the sauce..and arrange some pieces on the plate.(in pic,here)served with the red onions,tomatoes and celery leaves or the children can be creative with own salad versions InshaAllah

food is a blessing from the almighty...if u lov food .try feeding ..while you can feed yourself still... or nurturing basically . mayb some advise wud b keep your resources resoursefulnes creativity talent and zest 4 good things n the right ways..in life...n safe and available in the right ways...so manage your recipes and ..i say this is one way of a system that allows 2 do that and mayb even more...right ?!?thnk.uu.remain blesed!!
