Peri Peri Chicken

Whenever I ready , see & listen to the word " Peri Peri" , I remember Nando's- the South African brand which is snonymous to Peri Peri .... because it is the essential ingredients in Nando's menu ....with the different level of heat of the Peri Peri- Nando's use Peri Peri and Peri Peri sauce in almost everything they make I suppose, I had my first taste of Peri Peri Chicken and heard of Peri Peri in Nando's restaurant the first time some few years back ....I was amused by the name Peri Peri / Peli Peli/ Pili Pili which basically means pepper and is the name of an African Birds Eye chilli.
In the recipe I have used Nando's Peri Peri sauce -medium one, those who really love the Chilli heat can add the hot or extra extra hot ones.
The Peri Peri sauce goes so well with grilled chicken wings too.

Cut the chicken breast into cubes or bite size as per your preference. Add in all the ingredients for MARINATION except the cornflour. Let it rest for at least an hour...the more the better.

Heat oil in a pan / kadai....add the cornfour to the marinated chicken and mix and coat the pieces well. Once the oil is hot, fry the chicken pieces till they are golden brown in colour. Keep it on a kitchen tissue paper to absorb the excess oil. Set aside.

In a pan, heat the veg oil and add the garlic, saute for half a minute, no need to brown. Add the both the sauce and mix well,add in the fried chicken pieces and mix well. Put it on a serving platter, garnish with coriander leaves (optional) and serve hot !!! Bon Appetit!!!
