I made this at Kaze-Cabin Farm during their Wonderland Program, with Miho Ando of Marmelo as the instructor.

Try it with white rice!
If you want to save time, sauté the vegetables in sesame oil before mixing them into the miso.
A generous amount of chopped scallions also goes well mixed into the miso.
If you don't have access to any magnolia leaves, try grilling the miso on aluminum foil. Recipe by Kaze cabin nouen

  1. 70 gramsMiso (country-style or red miso)
  2. 30 gramsSugar
  3. 20 mlDashi (water)
  4. 1 dashSesame oil
  5. 1Eggplant, shiitake (fresh), carrot, green bell pepper, scallions, etc.

Steps

    Combine the miso, sugar, and dashi.

  2. 2

    Spread sesame oil on top of the magnolia leaves.
