White Bean Soup with Thyme and Garlic

Inspired by the way beans are cooked in The Art of Simple Food by Alice Waters, and the need to start using the thyme that is growing abundantly in my garden. I like this stew because the canned beans give it a buttery mouth feel even though it is a vegan dish. The thyme and garlic smell delicious.

Ingredients

20 minutes
4 people
  1. 2 (15.5 oz)cans Great Northern Beans
  2. 1/2onion (about 1/4 cup diced)
  3. 5small peeled carrots (chopped)
  4. 2small celery stalks (chopped)
  5. 1/4 cupolive oil
  6. 4garlic cloves, thinly sliced
  7. 2 sprigsfresh thyme, pull the leaves off the stem
  8. Salt and pepper to taste

Cooking Instructions

20 minutes
  1. 1

    Heat pan on medium heat. Add 1/4 cup of olive oil. Saute onions until shimmering.

    Add celery and carrots. Cook for another 3-5 minutes.

    Add the garlic and thyme. Cook for another 3-5 minutes.

  4. 4

    Drain and add white beans. Cook for another 10 minutes, stirring occasionally.
