Ingredients

  1. 100 gramsShiratamako
  2. 400 mlSoy milk
  3. 2 tbspVinegar
  4. 3 tbspOlive oil
  5. 1 dashSalt and pepper
  6. 1 tspMiso (to give it a fermented flavor)
  7. 1 tbspOr sake lees (to give it a fermented flavor)

Steps

  1. 1

    To prepare the shiratamako, put it in a plastic bag, then press down on top with a spatula to crush the lumps. This will make it harder for lumps to form.

  2. 2

    Put all of the ingredients into a bowl (except for the salt, pepper, and miso/sake lees), then mix evenly.

  3. 3

    Simmer over low heat, stirring from time to time to prevent scalding, until it thickens.

  4. 4

    Add salt and pepper and miso to taste, then it's ready to be served.

  5. 5

    To give it a consistency like melting cheese, finely chop up 1 piece of pre-cut mochi, then simmer your mixture while stirring until the mochi melts. It will look just like cheese.
