As soon as the summer season tends to end, I could smell the aroma of mustard oil in air coming from almost all the houses. This mango pickle has a special place in our hearts. An Indian thali is incomplete without achar(pickle). We Indians eat pickle with almost anything, like paratha, puri, khichdi, curd rice or even simple dal rice.
Here I am sharing my mom's recipe of aam ka achar.

Ingredients

1 kg
  • 1 kgunripe mangoes
  • 200 mlmustard oil
  • ¹½ cup yellow mustard
  • 2 tbsphing
  • 1/2 cupfennel seeds
  • 2 tbspturmeric powder
  • 1/2 cupred chilli powder
  • 2 tbspfenugreek seeds
  • 1+ 2 tbspfistful salt

    Wash and wipe dry all the mangoes. Cut them into small pieces. Remove and discard the seeds.

    Add 1 fistful salt and 1 tbsp turmeric on the mango pieces. Keep it in either a steel container or the glass one. Keep for 3-4 hours

  3. 3

    You will see, mango will leave water. Discard this water and let it dry on a clean cloth.

  4. 4

    Heat mustard oil in a pan. Let it heat till the smoking point. Switch off the flame. Let the oil cool a little.

  5. 5

    Now add first hing. followed by methi, yellow mustard, turmeric powder, fennel seeds, red chilli powder, salt and the mangoes. Let it cool down to room temperature.

  6. 6

    Store this Pickle in a dry airtight glass or ceramic container. cover the mouth of the container with a cloth.

  7. 7

    Keep as it for 3-5 days, mixing every day. Add more oil to the pickle enough to submerge the mango pieces
    Can stay for almost a year.
