Pre heat oven to 375 degrees F.

Prepare instant potatoes according to package directions.

Stir in 3 whisked eggs and cheddar cheese.

Spray muffin tins with cooking spray and spoon in potato mixture. Making sure you fill to the top. (I added chives, salt & pepper to the mixture as well.) ☆Bake for 15-20 minutes, until they're golden brown.
