My late mother used to often make this for our breakfast or a lunch on a day off when I was a child.

You can also cut the bread into smaller pieces.

Ingredients

1 serving
  1. 1 sliceSliced bread
  2. 1Egg (large size)
  3. 1use as much (to taste) Easy melting cheese
  4. 1Mayonnaise
  5. 1Japanese mustard (tubed)

Cooking Instructions

    Make slightly stiff scrambled eggs.

  2. 2

    Add your desired amount of mayonnaise (if you like mayonnaise, go ahead and put in a lot!) and Japanese mustard (I recommend adding enough for a spicy kick!)

    Mix well.

  4. 4

    Pile the mixture high on a slice of bread.

  5. 5

    Last, top with cheese.

  6. 6

    Toast until you've got a nice, golden brown color, about 5 minutes.
