Breakfast Tomato Bread 🍅

This is my favourite breakfast!
@sonia - the one I mentioned, similar to my tomatoes on toast.
We are on a mission to eat a better breakfast 😊 This is a weekend breakfast (because of the garlic!).
This has been my favourite holiday breakfast for years and usually eat it with salad, a wedge of lemon and a few capers. I have a few variations of the way I make this, depending on type of tomatoes and bread. it’s also not vastly different to my tomatoes on toast or bruschetta, but they are all different!
I usually prepare this the night before and let the flavours muddle in the fridge, ready for a really quick breakfast in the morning.
This is a dish I’ve had in various countries, it’s one I always seek out as it’s always good and naturally vegan. I’m never sure if there is a difference between Pan a la Catalana, Pa amb tomaquet and Pan con Tomato. Perhaps someone might be able to tell me?
This is a perfect ‘use up’ recipe for a tomato glut and slightly stale bread.

Ingredients

  • 6large tomatoes
  • 2 clovesgarlic
  • 2 tablespoonolive oil
  • 1/2 teaspoon sea salt
  • 4 slicesbread

    Wash the tomatoes. Cut in half a grate (holding the skin and grating the flesh) into a small bowl. If your tomatoes are small, you can blitz in mini

  2. 2

    Finely grate or crush the garlic (adjust quantities to your taste) and add to the tomatoes mixture. Sprinkle with the salt and stir through the olive oil.

  3. 3

    Slice your bread of choice. This generally works better with a slightly stale bread so that the bread doesn’t go soggy. You can dry it out in a low oven if you prefer. I like it with both dry and fresh breads of various types, so just use what I have!
