Had some left over vegetables and chicken and so tried a quick recipe that turned out really tasty and healthy

Finely chop carrots, baby spinach and cabbage up

Prepare chicken: drizzle some olive oil over chicken and then add salt and pepper over.

Cook chicken: pan fry chicken pieces for 15 mins (or until cooked). Squeeze lemon over when nearly finished.

When chicken is just about finished cooking, throw in your vegetables and add more salt (or seasoning as you wish) and put a teaspoon of honey in. Cooking on high heat for 5 mins. Then serve
