Boil potatoes, peel and mash coarsely.

Roast cumin, coriander and fennel seeds for a minute, then crush them.

Heat oil in a skillet and put crushed whole masalas.

Add chopped onion and fry till pink in colour.

Add ginger garlic paste and mix well.

Now add chopped tomato, chilli powder, turmeric powder, garam masala powder and chaat masala.

Mix well and cook for 5 minutes, then add salt.

Cook till oil starts separate, then add water.

Now add boiled potatoes, cover and cook for 8-10 minutes.

For poori, take flour, oil and salt in a bowl.

Add some water and knead a soft dough.

Make small size balls from dough and roll out pooris.

Heat oil in a big kadahi and put rolled poori in it.

Press lightly with ladle to puffed up pooris.

Fry from both sides and take out from oil.

Serve hot pooris with aloo tamatar gravy.
