Very easy to make, quick, and truly delicious. A nice change from the classic ham croissant.

Rinse and dry the mushrooms, and peel the shallot. Finely chop both using a food processor.

Heat a little olive oil in a skillet. Add the mushrooms and shallot, and sauté until the mushrooms' liquid has evaporated.

Turn off the heat. Stir in the cream, salt, and pepper. Set aside. Preheat your oven to 350°F (180°C), convection setting if available.

On a baking sheet, slice the croissants in half. Add some shredded Swiss cheese and the mushroom sauce. Close the croissants and sprinkle a little more shredded cheese on top.

Bake for 15 minutes. They're ready—enjoy!
