Presenting a popular street food of Bengal which is relished with great charm during chilled winter evening...... its Aloo Chop.
Aloo Chop is a crispy crunchy, pan fried fritters made of mashed potatoes and coated with gram flour.
But as we are flooded with a winter veggie namely ...... Green Peas and it happens to be one of my favourite veggie, so I have tried to create a fusion with another popular street food called RAGDA PATTICE where I have replaced dried white / yellow peas by fresh green peas
So presenting ALOO CHOP n RAGDA PATTICE in my style ........ Aloo Chop relaxing on a spicy bed of green peas curry along with onion ,tomatoes , coriander, tamarind chutney and sev.

Boil potatoes, mash it, add salt + chopped green chilli + ginger paste + pepper powder + cumin powder and mix all well. Now give shape of Pattice or cutlets.

Make a semi thick slurry by adding maida + corn flour + pepper powder + salt + water, slurry should be of thick but if dropping consistency.

Dip each Pattice in slurry and shallow fry till golden brown and keep aside.

Make a paste of tomato + ginger + green chilli and keep aside.

In moderately heated pan, add oil, add cumin seeds + bay leaf and allow to crackle, then add chopped onion and sauté till pinkish. Then add chopped garlic and sauté till garlic turns golden.

Then add tomato paste and cook for 1-2 minutes by adding little salt. Then add all dry spices + 1 ladle of boiled green peas and stir fry till spices leaves oil and turns aromatic.

Then add the remaining boiled peas along with the boiled water and cook for 3-4 minutes. Gravy consistency should be thick.

Now have to assemble for RAGDA Pattice. Take a plate and pour 2 ladle of green peas curry, place 2 Aloo Chop / potato fritters and garnish with tamarind chutney, Sev, finely chopped onion, tomatoes and dhaniya.

Aloo Chop n RAGDA Pattice is ready to serve.
