Sweet Potatoes with Jaggery (Gur ki Shakarkandi)

Peel the sweet potatoes and wash them with water. Cut them into small pieces and soak them in a bowl of water.

Heat 1 tablespoon of ghee in a pressure cooker, then add the jaggery.

After adding the ghee and jaggery to the cooker, add the sweet potatoes. Stir once or twice, then close the lid and cook for two whistles.

Open the cooker and cook on low heat for 1 minute. Your sweet jaggery-coated sweet potatoes are ready. Serve hot. You can garnish with white sesame seeds on top if desired.
