A Mauritian Sausage rougaille. Simple dish that I make as a university student all the time.

Cook the sausages in a frying pan for about 5 minutes.

Remove sausages from the heat and cut the sausages into 3cm pieces.

Peel and dice the onions.

Put the sausages back into the pan and add the onions, garlic and ginger paste, tomato paste, and thyme to the pan. Fry for 2 minutes.
To make this dish more of a sausage curry, add some garam massala (around 1~2 tbsp depending on your tasta).
(Additionally, green chillis can be added around this point to make it spicier.)

Add the can of chopped tomatoes and simmer on low heat for 15 minutes, stirring every now and then to avoid it burning and sticking to the bottom of the pan.

Season to taste. Sprinkle with snipped parsley. Serve with lentils and either rice or farata (also known as pharata).
