Sukiyaki-Style Pork and Enoki Mushrooms

Thank you to everyone who tried this recipe! When you add an egg, it tastes just like sukiyaki. The flavor is rich, so it’s great served over rice as a donburi bowl, too.

I was planning to make something else, but since enoki mushrooms go well with bold flavors, I thought I’d try making it with the sweet and savory taste my husband likes.

Ingredients

Serves 2–3 servings
  1. About 7 oz (200 grams) thinly sliced pork (such as pork shoulder or pork for stir-fry)
  2. 1 packageenoki mushrooms
  3. 1 tablespoonvegetable oil
  4. Salt and pepper, to taste
  5. 2 tablespoonssoy sauce
  6. 1 tablespoonsugar
  7. 1 tablespoonmirin
  8. 1egg (optional, but recommended)
  9. Chopped green onions, for garnish (optional)

Steps

    Cut the pork into bite-sized pieces (if using pre-cut pork, you can leave as is). Trim the root end off the enoki mushrooms and separate them. In a small bowl, mix together the soy sauce, sugar, and mirin.

    Heat the oil in a skillet. Add the pork and cook, then add the enoki mushrooms. Season lightly with salt and pepper.

  3. 3

    Pour the sauce mixture over the pork and mushrooms. Simmer until the sauce thickens to your liking, then remove from heat.

    You can serve as is, but it’s highly recommended to top with a soft-cooked egg. Break the egg over the top and enjoy!

    This recipe is also delicious served over rice as a donburi bowl. Thank you for trying it!
