Today I made lemon cupcakes.
Since it's summer, I was craving a light and refreshing desserts rather than heavy ones, so I made this cupcakes!
It was soooo tasty :)
The cupcake base itself is so fluffy and moist,
And the cream and lemon curd are not heavy and have a light and refreshing taste.

Steps
- 1
1) Lightly loosen the soft butter at room temperature.
2) Add sugar and salt and whip until the color is bright and the volume increases.
3) Add the eggs in several batches until well mixed.
4) Sift the flour and baking powder and mix lightly with a spatula.
5) Add room temperature milk and lemon zest and mix with a spatula to finish the batter. - 2
6) Pipe the batter into the mold 60 to 62 grams each (big cupcakes), and bake in a preheated oven at 170 degrees Celcius (338 Fehrenheit) for 25 minutes.
or 48 to 50 grams each for normal cupcake, 162.5 celcius for 15 mins
* Baking time and temperature may vary depending on oven performance.
