Chocolate Egg White Pancakes

Beat the egg whites with the sugar until stiff peaks form. In a separate bowl, mix together the flour, baking powder, and cocoa powder.

Add the flour mixture to the beaten egg whites one tablespoon at a time, mixing gently. Add the milk and orange paste, and continue mixing until you have a smooth batter.

If the batter is too thick, add a little more milk.

Heat a nonstick skillet over medium heat. When hot, pour in a ladleful of batter to form a pancake. Cover with a lid and cook for a few minutes. When bubbles appear on the surface, flip the pancake.

Stack the pancakes on a plate, dust with powdered sugar, and serve.
