Kaji Lemons or Kaji Nemu is a special variety of Assamese Lemon grown in various parts of the State. It is the State Fruit of Assam.
Kaji Lemons have some characteristics that set it apart from others. It is known for it's unique aroma and health benefits. It is oval and light Green in colour with a thin skin. This is exclusively found in Assam mainly but also found in a few Northeast regions.

Steps

Wash the kaji lemons at first. Pat dry. Now slice them according to one's own choice. Keep the slices very thin or a bit thicker as desired.

Also add mint leaves, sugar or honey. Muddle softly until it's done. Also can add a few slices of lemon but don't muddle them. Just add.

Now add ice-cubes as needed. Top it up with chilled soda. Stir and it's perfectly done.

Serve it super chilled right away. Sugar or honey can be adjusted accordingly. Enjoy!
