Jacket Potatoes with Cheese Filling

A great picnic idea. The filling can be anything, but today I'm sharing my favorite. The cheese melts in the hot potatoes, coating and binding all the ingredients together, and it's incredibly delicious! Especially outdoors, and especially if the shashlik isn't ready yet and it's chilly outside. 👋😁
You can bake the potatoes directly in the coals, on the grill, but that will take some time.

Steps
- 1
Boil eggs and chicken. Chop both into small pieces.
- 2
Add finely chopped green onion and coarsely grated cheese. Season with salt and pepper, then mix with mayonnaise to make the filling.
- 3
Wash potatoes, wrap each in two layers of foil. Bake in a preheated oven at 200°C for 60 minutes. Check doneness by piercing with a toothpick through the foil.
- 4
Keep baked potatoes in a pot with a tight lid to stay hot.
- 5
At serving, cut each potato (not all the way through), loosen inside, and fill generously with cheese mixture. Enjoy while hot!
Tips
For extra fluffiness, choose starchy potatoes and ensure they are well-washed before baking.
