Ingredients

10 minutes Prep 10 minutes Cook
2-6 people depending on dishes.
  1. Fish Sauce (Topping):
  2. 3 tbspFish Sauce
  3. 1 1/2 tbspPalm Sugar
  4. 3 tbspSoy Sauce
  5. 1.5 tbspDrinking Water
  6. Mango Salad (side Dish):
  7. 1Green Mango - Peeled and thinly sliced
  8. 4Small Shallots
  9. 3Thai Birds Eyes Chili
  10. 2 tbspFish Sauce
  11. 2 tbspLime Juice
  12. 2 tbspPalm Sugar
  13. 1/4Stem coriander - chopped
  14. The Fish:
  15. 1 KgSeabass (approx) Cleaned and "Butterflied"
  16. 1 TspSalt
  17. 2 TbspCorn Flour

Steps

10 minutes Prep 10 minutes Cook
  1. 1

    Prep Fish. On a large Tray or dish pat dry the fish then sprinkle with the salt both sides. Allow to sit for 5-10 mins then pat dry again. Coat with the Flour both sides. Heat the Oil in a LARGE frying pan to 190c.

    In a small sauce pan combine all the fish sauce topping items and heat for 3-5 mins until slightly thickens. Reserve until fish Cooked.

    In a small bowl combine everything for the mango salad. Save a few leaves of the coriander. Chilli in fridge until ready to serve.

    Carefully place the fish into the oil meat side down. Cook for 4-6 minutes depending how thick the fish is. It sound be a wonderful golden colour and the meat completely milky white and slightly coming away from the bone. Turn the fish over and cook skin side down for 2 minutes. Then transfer to some kitchen paper.

    Place fish onto a large platter or try. Spoon over the fish sauce and sprinkle with the remaining coriander. Serve immediately with the mango salad by the side. ENJOY :P

I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
