Steps
- 1
Get everything ready for the p ijeanut, sago (sabudana), and potato rolls. Dry-roast the peanuts, soak the sago thoroughly in water, and mash the boiled potatoes.
- 2
In a large bowl, combine the mashed boiled potatoes.
- 3
Soaked sago (sabudana), coarsely ground peanuts, green chilies, fresh coriander, rock salt (sendha namak), black pepper powder, and cumin seeds. Mix all the ingredients thoroughly. Grease your hands with a little ghee or oil.
- 4
Take a small portion of the mixture and shape it into a flattened roll by pressing it between your palms. Prepare all the rolls in the same manner.
- 5
Heat ghee or oil in a pan over medium heat. Add the rolls to the hot oil and deep-fry or shallow-fry them over medium heat until they turn golden and crispy on all sides.
- 6
- 7
To serve: Serve the prepared, piping-hot peanut, sago, and potato rolls with fasting-friendly green chutney or a yogurt dip.
Tips
If the mixture feels too sticky, add water chestnut flour or buckwheat flour for binding and prepare a smooth dough.
