I have no idea where I got the inspiration for this dish. My Wife has been watching Desperate Housewives (it’s … okay!), so maybe it was Terri Hatcher -> Teriyaki? Regardless, this is definitely one of the best dishes I’ve ever made. Takes a little bit more effort than my other dishes but worth it.

  • 8boneless skinless chicken thighs
  • 2limes
  • 8 ozred wine vinegar
  • … Lots of Cayenne Pepper
  • alliums 1
  • 6 clovesgarlic diced
  • 1 stalkginger diced
  • alliums 2
  • 1/2white onion diced
  • 3 stalksgreen onion diced (white part)
  • 1Calabrian pepper diced
  • teriyaki sauce
  • 1/2 cupsoy sauce
  • 1/2 cuprice vinegar
  • 1/2 cuphoney
  • 1 tbspbrown sugar
  • 1 tbspcorn starch
  • 1 tbspchili paste
  • starch
  • 2 cupswhite rice
  • garnish
  • 4 ozdiced pineapple
  • 1diced jalapeños
  • 3 stalksgreen onion diced (green part)
  • greens
  • 8 ozsnap peas

1 Hour (Active)
  1. 1

    Marinade your MEAT in (1) cayenne pepper; (2) lime juice; and (3) red wine vinegar. While marinading prepare your mise en place, including dicing your ALLIUMS 1 and ALLIUMS 2 as well as mixing your TERIYAKI SAUCE. I would hold off on the GARNISH and STARCH for now.

    In a neutral oil on high heat in a Dutch oven or sautee pan, fricasé the MEAT. About five minutes a side. Maybe longer if the marinade is being tricky.

    Lower heat to medium and add ALLIUMS 1 and TERIYAKI SAUCE. Cook for ~7 minutes and stir occasionally.

    Remove and set aside the MEAT. Then - AND THIS IS TRICKY - reserve approximately 1/3 of the TERIYAKI SAUCE and ALLIUMS 1 mixture. We want to be able to glaze later if necessary and we do not want too much sauce to prevent our ALLIUMS 2 from cooking. This is a tricky part and you may need to eyeball / adjust!!! Regardless, once done keep heat at medium, add ALLIUMS 2. Cook for ~7 minutes. Should be verrrrry fragrant.

    Re-add your MEAT and set heat to Low. Keep at a simmer.

    Prepare your STARCH in a rice cooker or instant pot. Once finished, I like to add sesame seeds, diced leek, and butter.

    Dice you GARNISH and wash your GREENS.

    Plate: (1) STARCH on bottom; (2) MEAT / TERIYAKI SAUCE on top; and (3) adorn with GARNISH and GREENS. LISTO!
