Easy Pepper Lunch
Wanted to use leftover hotpot meat
Steps
- 1
Mix all sauce ingredients in a bowl.
- 2
Heat a large pan over high heat. Add 1 tbsp butter.
- 3
Place frozen beef rolls in a single layer. Cook for 2–3 minutes, turning to separate.
- 4
Push beef to the sides. Add frozen corn/vegetables to the center. Cook for 2–3 minutes until hot.
- 5
Add cooked rice, 1–2 tbsp butter, and lots of black pepper.
- 6
Pour in half to two-thirds of the sauce. Toss everything together.
- 7
Cook for another 2–3 minutes until beef is cooked through.
- 8
Let rice sit against the pan for 1–2 minutes for crispy bits.
- 9
Taste and add more sauce, butter, or pepper as needed.
- 10
Top with green onions if using. Serve hot.
Tips
The key is butter + lots of black pepper + sweet/salty sauce + very hot pan. Let the rice sit against the pan for a minute or two before stirring to get those crispy browned rice bits.
