Ingredients

40-45minnutes
3-4 servings
  • 5-6chicken thighs, bone-in, skinless
  • 3 tbsp.olive oil
  • 2 tbsp.tomato paste
  • 4 clovesgarlic, minced
  • 1lemon, zest and juice
  • To taste, salt
  • To taste, pepper powder
  • 1 tsp.dried oregano
  • 1 tsp.cayenne pepper powder

Steps

40-45minnutes
  1. 1

    Preheat oven 425F/220C and line a baking tray with aluminum foil.

  2. 2

    Place chicken in a bowl and add all the ingredients.

  3. 3

    Massage the marinade onto the chicken and arrange on the prepared tray..

  4. 4

    Bake for 40 minutes, flip half way. Check for doneness (internal temperature should be about 175°F/79C)

  5. 5

    Let them rest for 5 minutes before digging in. This keeps the juices where they belong.
