Mini Matilda Chocolate Cake with Stovetop Chocolate Fudge Frosting
A little Matilda cake, because sometimes small is MORE than enough 🤎🍫

Preheat oven to 170°C fan. Grease and line two 6-inch tins.

Mix milk and lemon juice/vinegar, set aside for 5–10 min.

Whisk flour, sugar, cocoa, baking powder, bicarb, and salt.

Add egg, milk mixture, oil, and vanilla. Mix until smooth.

Gradually add hot coffee, then boiling water. Batter will be thin.

Divide into tins. Bake 22–28 min. Cool 10 min, then on rack.

For frosting: Heat butter and cream on low. Add chocolates, melt.

Sift in icing sugar and cocoa. Stir 2–3 min until thickened.

Remove from heat. Stir in vanilla and salt. Cool 15–25 min, stirring.

Spread frosting between layers and over cake while thick but spreadable.
Tips
For that MATILDA look, don’t wait until the frosting becomes completely cold and stiff. You want it thick but still spreadable, so you can pile it onto the cake and create those big, messy chocolate swirls.
