Fermented Oil Bean Salad with Cow Skin and Garden Eggs

Fermented oil bean salad is one of my favourite classic Eastern Nigerian dishes, and it fits this week's "In a Pickle" theme perfectly because the oil bean seeds are naturally fermented. What makes it special to me is how simple it is: just a few ingredients, but the fermented flavour is bold and savoury. The toasted calabash nutmeg and dry pepper add warmth, the cow skin gives it a soft, chewy bite, and the palm oil ties everything together. My favourite way to eat it is fresh, with chopped garden egg leaves, crunchy small seeded garden eggs and diced onions on the side. #CookpadApron2026

Steps
- 1
Prepare the spices. Lightly toast the calabash nutmeg and dry pepper in a dry pan for 1 minute. Blend each separately into a fine powder.
- 2
Soften the cow skin. Cook the ponmo for at least 10 minutes until tender, then cut into bite-sized pieces. Heat the palm oil in a pot over medium heat. Stir in the salt and blended calabash nutmeg.
- 3
Combine. Add the onions, ponmo, ugba, seasoning cube and blended pepper. Stir over low heat for about 10 seconds, just enough to warm through, then remove from the heat.
Tips
Cook the cow skin until tender but still slightly chewy.
Keep the heat low once the oil bean goes in.
Add the garden eggs and leaves last so they stay crunchy
