Ewok Energy Bites (No-Bake Oat Peanut Butter Balls)

These are named for the Ewoks because they're small, tough and easy to underestimate. I make them a week before every Star Wars party because they keep in the fridge, they don't need the oven, and a five-year-old can roll them with you. The results are only mildly sticky. This is our snack for the last night of our movie marathon, when the Ewoks show up on screen. They also make a great after-school snack the week after, if there are any left.

Steps

15 minutes + 1 hour to set
  1. 1

In a large bowl, mix the oats, chocolate chips, peanut butter, honey and vanilla until everything is coated and holds together when you squeeze it.

  2. 2

If it's too sticky to roll, put the bowl in the fridge for 15 minutes.

  3. 3

Roll the mixture into balls about an inch across. A small cookie scoop keeps them even. Damp hands help with sticky honey.

  4. 4

Put the balls on a parchment-lined baking sheet and freeze for about an hour, until set.

  5. 5

Move them to a container and keep them in the fridge for up to a week.

Tips

- Nut allergy at the party? Sunflower seed butter swaps in one for one.
- A tablespoon of ground flaxseed makes the mix easier to roll.
- For a party, pile them in a basket lined with a green napkin and add a stuffed Ewok, if you have one. That's Endor.
