So I had molasses. I needed to do something with the baby carrots I had. This is the result.

Ingredients

1 lbbaby carrots
1 1/2 cupwater
1/31/3 cup honey
1/3 cupmolasses
1 tspcinnamon
1 tspwhole nutmeg, zested
1/2an orange worth of zested peel and squeezed juice

In medium pot, boil 1 1/2 cups water. Add the carrots and cook till JUST tender enough to pierce with fork.

Drain 1 cup worth of water, drain rest. Put the reserve water in pot. Add all ingredients and 1/4 cup butter. Boil then simmer 15 minutes in lowest heat, pot covered with fitted lid.
