Stack the cucumber and slice through the cucumber slices. Then turn around and slice through again so as you have small chunky pieces

Cut up the shallots small

Empty the tin and rinse potatoes in cold water, pat dry and cut up the potatoes into chunky small pieces.

Cut up the tomatoes into 1/4 pieces.

In a bowl big enough to fit the ingredient in, add the potatoes and all the other ingredients. Stir carefully add the salt, pepper, lemon and mint sauce.

Then add the yogurt or sour cream and the balsamic vinegar. Stir gently until all is covered.

Then add the mix to a serving bowl and sprinkle with a little parsley dried or fresh.
