In a large bowl, mix together your eggs, vanilla, sugar and milk until it’s combined. Slowly add your flour, salt and baking powder. Stir as you go to make sure you end up with a smooth batter.

In a deep pan heat 1-inch of vegetable oil over medium-high heat. When your oil is ready, use your funnel to pour the batter into the oil in a circular motion.

When one side of your funnel cake is brown, use kitchen tongs to flip it over.

Remove from the heat and let it drip off over some paper towels.

Sprinkle it with a generous helping of powdered sugar and then ENJOY!
