My son likes Manchurian very much...so I experimented to make it without using mainda....I have some leftover rice...and made a Manchurian... believe me he just loved it and can't make out any difference...

3 cupcooked rice of your choice
1 1/2 cupchopped veggies (cabbage, french beans, carrot, capsicum) (onion garlic optional)
Salt as per taste
1/2 spoonvinegar/ lemon juice
1 1/2 spoonsoya sauce
1 spoonGinger paste (optional)

2 spoonchopped veggies
1 spooncorn flour
to tasteSalt

For manchurian balls: keep 2 spoon veggies a side and mix all the chopped veggies in cooked rice.. add the soya sauce, vinegar, black pepper powder, ginger paste and make a dough..
