Tex's Chicken, Cheese, and Red Onion Toastie, Jaffle, Sanga

Whatever you call them, toasted sandwiches cooked in this way are an amazing snack. Here's one of my more simple recipes.
Try also swapping some pre-cooked chopped mushrooms for the onions for a great chicken, cheese & mushroom toastie

Thinly slice some red onion, and leave to pickle in some red wine vinegar, while you prepare the rest of the sandwich (see my recipe 'Tex's Pickled Red Onions' in my profile

Toast the bread on one side, and butter the un-toasted sides

Season both slices on the buttered side with salt and black pepper and a little dried thyme

Add your filling to the toasted side of one slice of bread. Some thin-sliced Swiss first...

Followed by some chicken breast pieces...

...then some pickled red onion. If you want to add ketchup, BBQ sauce etc., do it now. Ill be serving mine on the side. Season, and add some more cheese. The Emmental cheese I'm using is not very salty, so I'm taking that into account

Now put the lid on toasted side down. Press down, and put in a preheated sandwich toaster for about 6-7 minutes. Check to see if it's browned nicely, if not, give it a couple of minutes extra

Before plating, cut and trim any unpleasant bits from your sandwich. I find scissors are the best tool for this
