Many remember Katz’s Delicatessen from the 1989 classic "When Harry Met Sally," but it's their pastrami Reuben sandwich that keeps patrons coming back for more.

“Let me be clear about one thing here — the Reuben is a made-up sandwich,” says Jake Dell, owner of Katz’s Delicatessen. “Back when we opened, you couldn’t find a deli that would dream of combining meat and cheese.”

“But times have changed, and sandwiches have evolved,” adds Dell. “After much pushing and prodding by our loyal fans, we added the Reuben, and it didn’t take long for these same customers to start asking our cutters to make it with pastrami, instead of corned beef. And so, I give you the pastrami Reuben!”

Ingredients

25 mins
1 serving
  • 2 slicesseedless rye bread
  • 4-5 slicespastrami
  • to tasteSwiss cheese
  • 3 tablespoonvegetable oil for frying
  • to tastesauerkraut (see my recipe 'Tex's Small Batch Sauerkraut' in my profile)
  • to tastedressing (I'm using ranch, but the traditional dressing is Russian)
  • to tastesea (or kosher) salt and freshly ground black pepper to season

    Pan fry your bread on one side in a skillet on a high heat

    Slice the Swiss thinly

    Remove from heat, and smear both sides of the toasted side with dressing (I've seen recipes that use Thousand Island, or horseradish instead of Russian). Add the pastrami to the dressed side of one slice. Reduce the heat of your skillet to a medium low heat

    Put the sauerkraut in the pan and add the sliced cheese on top. Cover with a pan lid and cook for 1-2 minutes

    As the cheese just starts to melt, remove it, and the sauerkraut, from the pan and position on top of the pastrami. Increase the heat in the pan to a medium high heat

    Put the base in the pan and cover with a pan lid again until the bread is toasted

    Add the lid of the sandwich and flip over on to the un-toasted side. Cook until toasted

    Finally, remove from the pan, add extra dressing if required, and serve hot

    Remember, the way to serve a Reuben or Rachel is "Axis, Neutral, Ally": Kraut, Swiss, Russian 😺

I'm a designer/artist and I learned to cook when I started making my own Chinese food over 30 years ago. I'm a lover of my native British food, but recently I've developed a taste for American comfort food, especially sandwiches and BBQ (watching too much 'Diners, Drive-Ins, and Dives' probably). 😸 Unfortunately, we don't have any independent US-style diners or drive-ins in my neck of the woods, so I had to learn from recipe books and the Food Network. I'll also be publishing some traditional UK classics in case any non-Brits want to have a crack at Brit grub.

"Axis, Neutral, Ally", heheh. This is one of my favorite sandwiches :) I didn't know it was also called a Rachel! Do you know where that name comes from?
